Kathy Ladd, Dietitian
Kathy is a registered dietitian with over 30 years of experience, which she gained working at the Health Sciences Centre in the areas of Rehab, Medicine and Orthopaedics. After chancing upon a radio program featuring a physician who was an expert in low carb nutrition and intermittent fasting, she became interested in this way of eating and began to delve further into the science behind it. She learned how it improved metabolic health, mental health and could counteract a vast number of other diseases. Although low carb was against everything she had learned as a dietitian, Kathy decided to change her way of eating and began a low carb, healthy fat (LCHF) diet over 3 years ago. At the time she was experiencing chronic joint and low back pain, and her mom had been diagnosed with Alzheimer’s Disease. Since making this change to her diet, her pain has significantly improved and she continues with this lifestyle to minimize her risk of chronic diseases such as Alzheimer’s Disease. Kathy is passionate about low carb nutrition and would like to help you experience the many benefits it has to offer. She has completed her certification in LCHF for Dietitians. Kathy is also certified in LCHF for health promotion and medical nutrition therapy.

Jillian Paulmark, Dietitian
Jillian Paulmark RD, CDE, CBE
So, what can I say about myself? I didn’t want this to be your typical bio. I wanted it to be something more personal, so you get an idea of who I really am. I entered into nutrition on the heels of being a rhythmic gymnast in my teens having had bulimic tendencies and a completely distorted body image. I was hell bent on helping people with eating disorders. I soon realized though, diabetes education was my true passion followed by helping people undergoing bariatric surgery for weight management. I spent 21 years in the WRHA, 15 years in the section of endocrine at St Boniface Hospital as a diabetes educator, 5 years in the Center for Metabolic and Bariatric Surgery at the Victoria General Hospital and 1 year as a Chronic Disease Management Clinician in the St. James/Assiniboine My Health Team. I have been a certified diabetes educator for over 20 years and a certified bariatric educator for 2 years. I have completed both Level 1 and 2 of the Academy of Nutrition and Dietetics Certificate of Training in Adult Weight Management and I am a licensed facilitator for Craving Change. I have also worked closely with First Nations communities to help address the epidemic of diabetes and chronic disease in their communities.
What truly motivates me is seeing people succeed and having them improve their quality of life and am truly passionate about helping people with weight management. I have always been one that pushes boundaries and I like to colour outside the lines. Similar to Kathy Ladd, my fellow RD at MDLS, I also believe there is another way to heal our bodies. I am presently studying to become certified in Functional and Integrative Nutrition, so I can actually learn how to use food to heal and have the quote by Hippocrates (the father of medicine) ring true, “Let food be thy medicine and medicine thy food”. I look forward to working with you and helping you on the path to achieving your goals!
My parting words of wisdom is a quote from Pablo Picasso, “Learn the rules well, so you can break them like an artist!”
